I volunteered to make a cake for this couples’ wedding. So to prove that I got skills other than killer instinct, I took the challenge to make the bride to be’s birthday cake to be a wedding cake.
The bride wanted a chocolate cake. I was like ok. The bride wanted the filling to match Costco Cream Cheese filling. I was like. I guess. I have never tried it. Then the bride was all, I want it to match my colors, red, silver, black and white. I was like ‘whatever’. The bride was like, I want gerber daisies. I was like ‘fuck yeah, is this even gonna challenge me in the slightest?
The cakes were off the shelf cakes, substituted the water for milk, a packet of pudding was added to each. Chocolate fudge pudding. It took about 4 boxes and 4 packets of pudding. 12 eggs and 1 and 1/3 cup oil. I baked that shit at 325 for an hour and 15 because of how many cakes was in my oven. Yes, awesome English. Fuck you. Anyways. I made my Vanilla icing to help coat and build the dam. Once the cakes were cooled from sitting in the fridge, I dam’ed them and put the filling in. The filling was made with cream cheese, vanilla extract, dream whip and French vanilla pudding. It was good, too much vanilla, I got crazy!
This is the right way to make it, through trial and error.
2 8-oz packages of cream cheese (softened)
1 packet Knox Gelatin
2 packets of Dream Whip
1 packet French Vanilla Pudding
2 cups whipping cream
1 cup confectioners sugar
2 Tbsp Vanilla Extract
1 cup of water
